Another tapas night with friends.  I ALWAYS look forward to those nights because we put our heads and cooking prowess together and come up with a tornado of tapas!  While The Hubster and I waited for our sweet neighbors to arrive, we went ahead and snapped some pics of what we put out for our half, and ohhhhhhh, BOY!  This stuff was BEYOND BUENO!

I made mushroom-, pine nut-, and cheddar cheese-stuffed puff pastries, prosciutto-wrapped asparagus, mini-Reuben sammies (it IS March, after all!), a quite-lovely cheese board with the sharpest cheddar and GORGEOUS artichoke hearts (stems included!).  All those hyphened menu items!  But to be as authentic as possible, I made a legit tapas called patatas bravas.  I, of course put my own spin on it and they were delcioso!

Go on and spend a night with community and each of you bring a prize!  Call it tapas night or call it whatever you want - just bring THESE to the table with you!

PATATAS BRAVAS

4 - 5 butter gold potatoes, scrubbed, dried, and sliced lengthwise into 8 wedges

1 1/2 cups canola oil

sea salt

pepper

1/4 cup prepared horseradish

1/4 cup sour cream

paprika

1 can ro-tel for dipping

4 green onions or scallions, sliced thin

Heat canola oil in heavy skillet (I use my cast-iron, of course) on medium-high heat for two minutes.  Place potato wedges from one potato carefully into oil.  Let cook for five minutes.  You will be tempted to turn them over before then.  Don't.  After five minutes, flip them and let them cook another five minutes.  You will be tempted to pull them out before the five minutes is up.  Don't.  Carefully take them out one at a time and lay them on a cooling rack with paper towel underneath (see notes).  Sprinkle them liberally with sea salt and pepper.  Repeat cooking with the next potato and directly before removing them from the oil, lay the first batch on whatever tray or plate you would like to use for your display. While the next batch of potatoes are cooking, mix the horseradish and sour cream and drizzle (prettily!) over the potatoes on the platter.  Sprinkle with paprika and then a bit of green onion.  Repeat with each layer of potatoes, crisscrossing each layer over one another for an authentic look. 

Notes: Any heavy skillet will do as long as it is deep enough to fit the oil.  For crispy potatoes, use the cooling rack.  If you don't have one or want softer potato wedges, simply dry them on paper towels laid on a plate or platter.  I use a condiment squeeze bottle for the horseradish sour cream drizzle.  I put the ro-tel in a cute bowl next to the potatoes for people to pile on top of their bravas if they like.  Hora de comer!!

 

BREAKING BREAD

You won't believe this.  I mean, it took me a few blank stares and lots (and lots!) of tastes to believe it myself!  

As you know, I'm the low-carb girl of the family, and quite often cook that way without The Hubster even noticing.  Well, this is another sneaky-not-sneaky way of getting our low-carb on without allowing him to feel like he is missing out on anything.

For Superbowl Sunday,  he wanted wings and turkey burgers.  So of course I made them instead of buying them because that way I can control the ingredients.  For the burger buns I made cauli-bread.  Yes, I know.  That doesn't sound like the appealing direction I was taking when you first started reading.  But trust me here - this was OUTSTANDING!

I took a few recipes that I found along with some that were sent to me, added my own flare and touches, and came up with what I think is the best "bread" you could ask for!  This recipe is for flat, round buns.  And it was beyond delish!

CAULI-BUNS

1 head cauliflower, "riced" (Or if you can find it pre-made in a bag, PERFECT!) (see notes)

3 eggs

1 cup mozzarella cheese

1/2 cup Parmesan cheese

1 tbs sea salt

1 tbs pepper

Heat oven to 350 degrees.  Combine all ingredients in a bowl.  Line a baking sheet with parchment paper (this is CRUCIAL for the success of these "breads").  Place mounds of the cauli-mixture into whatever mold suits your purpose.  In this case, it was the same round mold we used for the turkey burgers so they would fit perfectly.  Bake for about 20 minutes.  here's the thing: if they are not golden brown on top, WAIT UNTIL THEY ARE.  Flip for 5 more minutes.  Let rest for a minute or two before removing from the baking sheet.

NOTES:  Don't use frozen cauliflower or froze riced cauliflower, as there will just be too much moisture.  The other thing about this recipe is you can litch-rah-lay do whatever you want to make it INTO whatever you want.  For example: add lots of Italian seasoning and plenty of garlic and shape it into a long mound and you've got breadsticks!  If you want, you can add fresh sage and a tiny bit more sea salt and you've got hasbrown bread!  If you like, you can add cheese at the very end and heat until melty and you've got cheesy bread!  This is also SHEsTox-friendly for Week Three!  I promise you this, you will NOT believe how "bready" these things are.  It's delicious INSANITY without the carbs!

PLAYING SQUASH

All year long I wait in anticipation for October to get here.  For my family, it means our annual Fall Family Day, the start of the Renaissance Festival, and all things autumn eating!!  For October, and considering my obsessive compulsivité, I cook orange-colored things or autumn-inspired foods.  So this night I had a turkey tenderloin that I cooked up with clove, sea salt and pepper, served in its own juices, and I paired it with the butternut squash and dried cranberries I had in the fridge.  The squash was AH-MAHZ.  Like, the stuff dreams are made of.  So that's the recipe you have here.  Happy Autumn, Everyone!  Be blessed in abundance!

BUTTERNUT SQUASH WITH DRIED CRANBERRIES

1 butternut squash, halved and seeded

extra virgin olive oil (evoo)

1 tbs sea salt

1 tbs pepper

1 tbs pumpkin pie spice

1 tsp ground cloves

1/2 tsp cayenne

1/2 cup dried cranberries

1/4 cup parsley, chopped finely

Sprinkle the two halves of the squash with evoo, place flesh-side-down on a prepared baking sheet, and roast at 350 degrees for 30 minutes.  Let cool for five minutes.  Scoop out the flesh from the inside of the squash into a pan sprinkled lightly with evoo.  Add seasonings and smash with a potato masher while it cooks on medium heat for about one minute and to desired consistency.  Remove from heat and gently fold cranberries in.  Sprinkle with parsley before serving.  This is SHEtox Week Three -friendly and low-carb!

Mellow Yellow

So there I was, staring at another piece of fish and wondering how in the WORLD I was going to put it on a plate with  a little variety.  I considered my obsessive compulsivité with colors and months and wondered if I could fit in that it was August and that means yellow.  I looked in the fridge for whatever veggies I might have to help out, and lo-and-behold!  I found yellow squash, yellow bell peppers, and lemons!  I made lemon-thyme cod, sauteed peppers and onions, and yellow squash moots-a-rell au gratin.  This was going to be fun AND delicious to cook AND eat!  This is totally Week Three-friendly for the Detox & Cleanse, low-carb for all you low-carbers, and delicious for all you EVERYONES!!  

YELLOW SQUASH MOOTS-A-RELL AU GRATIN

4 yellow squash, sliced about 1/2 inch thick

1 can rotel

1- 8 oz pkg mozzarella cheese

1 tbs sea salt

1 tbs white pepper

1 tsp garlic powder

Place one even layer of squash in a prepared 9x13 baking pan, sprinkle with half the can of rotel, mozzarella cheese, sea salt, pepper, and garlic powder.  Place the rest of the squash in a layer over the first layer, then repeat with the other half of the rotel, seasonings, and cheese.  Bake at 350 degrees for about 20-25 minutes, or until golden brown and bubbly on top.

 

My Crabby Friend

My friend, Hugh Durlam, is a FANTASTIC cook.  And when he decided to do my Inside-Out Detox & Cleanse (aka, and lovingly referred to as the "SHEtox") I knew he would make a mockery of the fear of what to cook.  And I was right!

When he made these beautiful crab cakes for a Week Two-friendly meal, I knew I needed the recipe.  He agreed that I could share it with you all.  You're welcome.

DURLAM'S LOW-CARB CRAB CAKES

1 head of cauliflower
1lb lump crab meat, cleaned and picked for shells
2 eggs, beaten
2 green onions (scallions), chopped
2 oz crumbled feta (Week Two) or fresh shredded Parmesan (Week Three). And buy the good stuff (treat yo self!)
onion powder
garlic powder
sea salt and pepper

Preheat oven to 350.  Pulse cauliflower in processor. layout flat on parchment on large cookie sheet. Place in oven for 10 min. Place towel or cheese cloth into bowl. Dump cauliflower on to towel. Grab the loose ends of the towel like a hand and start to twist the cauliflower into a ball, twisting and squeezing as hard as you can. you'll be surprised how much water comes out. 
Now drink that water!

Mix all ingredients in large bowl. Heat up your skillet with extra virgin olive oil.  Make tight patties in your hand and place in hot pan. (Should sizzle) Cook about 5 min on each side. Flip carefully as they don't tend to stick as well as the fattening ones do.

Makes 10 patties!

NOTES: I made them and used parsley in the mix, as well as some fresh herbs I had in the fridge.  WONDERFUL!!  Made me feel crabby, too!

Fish and veggies in this house are a staple!  It's because when we allow ourselves to have rewards over the weekend, it's the very best way for us to get back on track.  Here's the problem: it is difficult to make fish and veggies and have it be different each time so it doesn't become hum-drum.  So I am always looking for ways to bring different kinds of vegetables into the mix! In this case, a beautiful artichoke was a great accompaniment to lemon-thyme fish over sauteed mushrooms, onions, and zucchini.  I gave The Hubster a quarter, and I ate a quarter, and had the other two for lunch the next day!  Super yummy, "SHEtox" (Inside-Out Detox & Cleanse) Week Two-friendly, and low-carb.  Did I mention it was ridiculously easy??

LEMON PEPPER ROASTED ARTICHOKE

1 artichoke, leaf tips snipped, end nub peeled

extra virgin olive oil (evoo)

1 lemon

2 tbs sea salt

3 tbs pepper

Carefully cut the artichoke into quarters length-wise.  Being careful again, cut and scrape out the spiny needles in the middle of the choke and discard.  Place the artichoke pieces on a baking sheet and sprinkle generously with evoo, making sure to get inside the leaves and front and back.  Squeeze the juice of the lemon over all four pieces, making sure to get inside the leaves again.  Blend the sea salt and pepper and using your fingers, sprinkle over each artichoke piece.  Bake at 350 degrees for 30 minutes

NOTE:  After scraping the leaves with your teeth, the meaty, beautiful heart is in the middle and with the peeled stem still in place, is not only edible, but a beautiful treasure in your mouth!!

I LOVE WAFFLES

.....and The Hubster.  I love him enough to do THIS to his waffles.  I mean, let's be real here: marriage is hard work in order for it to be successful, and the only extra time this took was about a minute longer to use a cookie cutter to cut them out.  That's not hard work.  That's love, if you'll pardon the cliché.  I used a mold for the egg and fixed the plate up all purty-like and he loved it!  And he loves me.  And I'm ever-so-grateful.  Grateful enough to share my vanilla waffle recipe with you!!  It's fast and easy, and you'll love them!  (And maybe you'll learn to love me, too.)

VANILLA WAFFLES

2 cups flour

1 1/2 tbs baking powder

1/4 tsp sea salt

2 tbs sugar

2 eggs, beaten

2 tsp vanilla

1-1/2 cups milk

1/4 cup canola oil (or other medium-to-high heat oil)

Get your waffle iron going by preheating it while you make your batter.  Combine the flour, baking powder, salt and sugar.  Make a hole in the center of your dry ingredients and and add the eggs, vanilla and milk. Stir like a crazy person until well-combined, though your batter may be just a tad lumpy.  Add the oil to your batter and stir again.  Using a ladle, pour desired amount of waffle batter onto your preheated waffle iron, and cook until desired brown-ness (is that a word?).

NOTES: Since carbs, sugar, and flour are a treat in this house, I at least use all-organic ingredients, including the oil, but this is not a necessity in order for the waffle to taste crazy-amazy.  #LoveYou

This catering job was FUN!  A lot of hard work, but really, really FUN!!  This was for a graduation party, and the theme was Hawaiian.  Now you KNOW I love and appreciate a good theme, and after some communication, we finally agreed on a menu consisting of sticky chicken drumsticks, garlic mashed potatoes, Hawaiian crispy spring rolls, teriyaki meatballs, and a fruit-and-cheese display that ROCKED.  The Hubster built the pineapple stand for the tree in the center of the display, and I am SUPER proud of it!  

A HUGE hit were the Hawaiian crispy spring rolls, and though they weren't a cinch to make on a large scale for 100 people, they are not hard to make and worth the effort if it's for family dinner or an appetizer to entertain.

So I invite you to join me in my kitchen, and let's bring the Hawaiian islands to YOURS!!

HAWAIIAN CRISPY SPRING ROLLS

canola oil

1/2 red pepper, sliced paper thin

2 carrots, grated

8 bamboo shoots, sliced paper thin

green or savoy cabbage, about a half-head, shredded

1 cup bean sprouts (fresh or canned - if canned, drained)

1 cup rice noodles, soaking in warm water

2 tbs oyster sauce

2 tbs soy sauce

sea salt

pepper

10 spring roll wrappers

1 egg, beaten

1/2 pkg unsweetened shredded coconut

Heat enough canola oil in the bottom of a deep pan or wok to cover the bottom, and on medium-high heat for about a minute-and-a-half.  Add all your vegetables and cook everything together until they are soft, but al denté.  Strain noodles and add those to the vegetable mix, and then add oyster sauce, soy sauce, salt, and pepper. Mix well and remove from the heat, and pour into a bowl.  Place a spring roll wrapper in front of you, with one corner toward you so that it looks like a diamond. Brush the edges of the wrapper with the beaten egg. Add about a tablespoon or two of the filling in the bottom part of the wrapper in a thin log-like shape, being careful not to touch the edges. Leave about 1/2 inch at the bottom.  Sprinkle with a bit of the shredded coconut.  Lift the wrapper over the top and tuck it in under the filling. Fold over the left side, and then the right side and roll it up to form a tube-like little package. Brush a little more egg along the top part and seal the roll.  Repeat this process until all your rolls are full and ready to be cooked.  Place a pan over medium-high heat, and sprinkle with enough canola oil to cover the bottom and about an inch up the sides.  Wait until the oil is hot - about two-to-three minutes - and then deep fry the egg rolls until they are lightly brown on one side, turning and lightly browning on the other side. Drain them on paper towels or a cooling rack with paper towel underneath for your roll to stay extra-crispy.

NOTES:  Serve with your favorite dipping sauce, or for these in particular, make it a spicy pineapple sauce!
